Batateche Toya Paratha / Potato Saar Paratha.


“Batateche Toya Paratha / Potato Saar Paratha” … A Recycled dish … I ground the Batateche (Potato) Toya / Saar I prepared for lunch to a fine paste and add in wheat flour to make soft and tasty parathas … Yummy Yumz …... 


** Batateche Toaya / Potato Saar is prepared often in my place for lunch instead of having Dalitoy or Tomato Saar on regular basis. We love potatoes in any form and also love this toya / saar very much with hot rice with some kismuri or any other dry masala dish. Its monsoon and the potatoes stocked at home somehow always get spoilt fast due to humidity. In order to avoid wastage, I prepared potato toya out of more than necessary potatoes in order to avoid wastage. There was about one large sized cup of toya that remained. Now the delima started as to what could be done out of it. 

** I was in no mood to have it again as it is. So I just put it in mixer grinder as it is, ie with the chillies, seasoning etc. that was added to the toya and ground it without addition of water to a fine paste, added on wheat flour and the result is before you … Yummy soft and delicious aloo parathas with seasoning I must say. It is my motto and advice to all never to waste food. In the first place avoid cooking excess food. Most of the time the dish either goes sour or waste or like me you don’t feel like having it again. So cook only a little bit more than what is necessary, so that you don’t fall short.

** Food should never be wasted and that should be taught to children also at home. Serve only that much that may get consumed. You can always take extra helpings ten times. But serving all at once and then chucking it off coz. you cant empty the plate is simply NO-NO. Think of all those people who die of hunger. You can always feed it to the poor on road sides and get their blessings. I always try my best to cook how much is necessary and also recycle them into different dishes if possible. For innovative minds the combination of mix and match is endless.

** The recipe for preparing this paratha is simple. It is similar to aloo paratha, but the difference here is the spies which get ground that were added while seasoning. I put about 1 full cup off the batateche toya / saar in mixer grinder along with the green chillies, curry leaves, seasoning etc. that were added to it, as it is and ground all to a smooth paste.

** Take the ground batter into a large flat bowl. Now add in wheat flour as much as necessary and knead it well to a soft dough consistency. No need to keep this aside at all for resting and no need of adding oil too. Remember it is seasoned toya which has oil that was seasoned. The amount of flour depends upon the consistency of the ground potato mixture and its ability to absorb the flour. So be careful in adding the flour. Keep adding and kneading as and when necessary.The dough should be smooth and soft enough. 

** Divide the dough into large lemon sized portions and roll into into smooth balls and keep them aside. Roll the prepared balls in wheat flour, seeing to it that it is fully dusted with flour and roll it out into a round shaped roti / chapati / paratha. You can dust in more flour as you roll the roti if you find it difficult to roll the paratha. Do not roll the roti very thin like chapati, keep it a little bit thick. You will get a round paratha of about 6-8 inches in diameter.

** Heat a tava on high, when hot, lower the heat to medium, spread some ghee / oil on the tava and gently place the rolled paratha. There should be no creases. Apply ghee / oil on the top surface and spread it with the back of the spoon. When paratha gets cooked on bottom side, ie you will be abble to see some bubbles on the top, then flip over and cook the top side too till you get brown spotted crispy paratha. Remove and keep it aside. Repeat the procedure with the remaining prepared dough balls, by rolling into paratha and frying them on tava on medium heat in similar manner. 

** “Batateche Toya Paratha / Potato Saar Paratha” are done and ready. Serve them hot with any side dish curry or bhaji of your choice. You can relish this roti with only chutney or pickle too. You can also enjoy this paratha simply with a blob of butter as I do. It tastes yummy. Remember the paratha already has enough spices so there is absolutely no need of additional bhaji or curry for this one and curds or pickle is fine so is butter. Enjoy this recycled dish that will not only give you relief that you have not wasted but will also give the children something yummy to eat on.
