Tomato Rice With Moong Sprouts.


“Tomato Rice With Moong Sprouts” … A simple satvik spicy tomato flavoured pulav / rice with the added goodness of sprouted green moong that goes very well with any Veg or Non.Veg Curry or even simple curds or raita … I served this with Pineapple Curry in Coconut Milk and it tasted awesome … Yummy …...


This is a very simple spiced up rice cooked along with moong sprouts and tomato puree that goes well with both spicy and non spicy side dishes. The rice is wholesome on its own and can be served with just curds or raita too. Come monsoon and the festive season is full on for almost 4 months and many a times I need to prepare something satvik ie without Non.Veg or onion~garlic etc. During these days, I prefer such pulavs that serves both the purpose of something yummy to eat as well as something simple and satvik. Very easy and quick to prepare. All you need to do in advance is keep ready moong sprouts. Moong sprouts add on the necessary protein and the crunch to the rice along with the added goodness of sprouting that makes it that much more healthier. In all a very simple but appealing pulav / rice/ bhaat that is simply awesome when served with any curry of your choice. I served this with pineapple curry in coconut milk and it complimented this dish very well. It really was an awesome combination. Ingredients:
Basmati Rice / Jeera Rice : 3 cups 
Moong Sprouts : 3 cups.
Ghee : 1/4 cup
Red Kashmiri Chilly Powder : 3-4 tblsp 
Haldi / Turmeric Powder : 1 tsp
Hing / Asafoetida Powder : 2 tsp
Tomato Puree : ½ cup
Salt to taste
Boiling Water : 6 cups


** Soak Basmati Rice in water for 30-40 minutes. Let drain in a colander till almost dry. 

** Keep the moong sprouts ready. For sprouting method of moong please use the search option in the blog and you will find the same there.

** Heat ghee in a thick bottomed pan, when the ghee melts and is hot enough, lower the heat to medium and add in the curry leaves and then add the chilly powder, haldi powder and hing powder and fry for a minute. 

** Add in the moong sprouts and mix well. Add in ½ cup of boiling water and bring to a boil. Lower the heat and cook on low heat for about 3-4 mins. 

** Add in the strained rice and mix well. Do not stir the ingredients putting pressure. Just lightly or else you will break the sprouts. Now add in the remaining 5.5 cups of water, salt to taste, give a quick stir and bring all to a boil.

** When the water reaches boiling point allow to boil for 2 mins. Then lower the heat to minimum and cook covered with a tight lid till the rice till 80% done. Now add in the tomato puree and mix gently. The puree should mix into the pulav well. Cover and cook till done.
