Bread Appo / Paniyaram served with Coriander ~ Mint Chutney.


“Bread Appo / Paniyaram served with Coriander ~ Mint Chutney” … An awesome Appo that can be prepared in a jiffy … Again another instant dish that solve’s the dilemma of left over breads … Similar to the rava bhakri with bread and the bread dosa posted earlier. But here I have made variations in the ingredients … Yummy .... 


I have written quite a lot about usage of left over bread. I have also included a lot of recipes in the Blog using left over bread slices which is always a problem most of us face. But rest assured you can always recycle them and prepare yummy dishes with lots of variations. As I said, I hate wastage of food and in my kitchen I hardly throw away any food and bread is quite versatile and can be adapted in cooking many dishes. Just use the search option for the many varieties I have posted using the leftover bread. Here for this dish I have used brown bread. You can use any bread or ladhi pav that is famous in Mumbai. Coming to the recipe I have prepared appos / paniyarm this time out of the left over bread slices. Appos are small dumplings prepared in a tawa which has several dents. The dents are oiled and batter is poured into each of them, covered and cooked till done. These have a very spongy texture and taste awesome with any chutney of your choice. Appo's taste very good with spicy curries too. I have already posted the recipe for Appo with various variations before. So go ahead, prepare these spongy yummy dumplings and enjoy them with any curry or chutney of your choice with family and friends. 

** Here is my version of the Bread Appo Recipe : Ingredients :
Brown Bread Slices : 4
Rava / Sooji / Rulav : 2 Cups
Rice flour : 2 tblsp 
Curd : ¼ Cup
Hing : ½ tsp
Green Chillies : 4-5 
Ginger : ½ inch piece 
Salt to taste.
Oil- for drizzling
Water as required.


** You will need : To prepare these appo's you need the special “Appo mould pan / Paniyaram pan / Aebleskiver pan” a pan which has round dents in them which is available both in cast iron or Teflon coated. Appos are small round savories cooked in these dents.

** Cut the bread roughly into pieces. Do not trim/ cut the bread edges. Add on all together. 

** Put the bread piece in mixer grinder and run for a few seconds, you will get them crumbled. Now add in the green chillie, ginger, hing, curds and grind to a smooth paste. 

** Add in the rice flour and Rava and one cup of water and run the mixer for another minute to mix all together well. Add more water for grinding if necessary. But keep the consistency thick. Remove the ground batter into a bowl. Leave it aside for 20 mins. 

** The bread and rava both soak up a lot of water, so beat the batter properly by adding salt to taste. Be careful with the salt as bread contains salt in it. If you still find the batter too thick add in some water and mix well. The batter should be of thick dropping consistency. 

** Heat the Appo tava, add some oil in each of the dents, when hot enough, lower the heat and pour a small ladleful or large tablespoon of the batter in each of the dents, it should fill to 3/4th only as it rises when its gets cooked. Cover and cook on medium heat. 

** Now uncover the lid, check if the bottom surface of the appo is crisp and top surface too has cooked. You can test it by just touching the top surface of the appo with fingers. If done the batter will not stick to your fingers. Gently flip over the appo's one by one with the help of a blunt knife running it smoothly round the edges of each dents and cook the other side uncovered till done. 

** Repeat the process till desired number of appos / paniyarams are removed. Once you have remove the required number of appos, immediately store the remaining batter in airtight box in the fridge for later use. Remains good for a day. When you want to remove hot and fresh appos, just remove the batter and keep it for half an hour to come to room temperature and then remove the same. 

** Bread Appos / Paniyarams are ready to be served. You can serve this with chutney or pickle or any other side dish of your choice. Children will love this soft spongy balls / appos with jam of their choice. I served it with coriander ~ mint chutney (posted earlier in the blog). Go ahead and enjoy these appos / paniyarams with your family and friends. No more wasting those left over breads.
