Alsando / Chawli / Yard Long Beans Upkari (Bhaji).


"Simple Alsando / Chawli / Yard Long Beans Upkari / Bhaji" … Upkari or Stir fried dish is a simple dish served along with other dishes. This is a dry dish that is prepared almost in every Konkani Saraswat home. It is surprising to note that when the whole world is going ga ga now on stir fried veggies our ancestors had already introduced it into our daily diet ages back. Sometimes, It really disheartens me to note that Konkani Cusine being so healthy lacked proper promotion world wide, so stayed back behind closed doors unaware to the people round the world. Here is simple Alsande Upkari for that is delicious, healthy and nutritious …. 


This is a simple bhaji, sort of stir fried veggie as referred by present generation that is garnished with freshly grated coconut … Goes very well as a side dish with Dalitoy (Dal) – Rice … Most of the dishes that come into popularity are most of the time available in our very own kitches. Upkari with simple seasoning of mustard~red chillies~curry leaves is a traditional and old method in our homes, considered very healthy and easy to be prepared. Our ancestors saw to it that one bhaji of any veggie did accompany our full meal. This side dish always occupied a place in the thali then and now too. So go ahead and enjoy the benefit of this simple Upkari. I had posted this long back. Repeating it, the method and dish remains the same. The only difference here is in the variety of Alsando / Chawli / Yard Long Beans. These are very long and tender compared to the one’s I posted before. These are available in plenty during monsoon, so it’s a pleasure to munch on this tender dish that give a soothing effect to the tummy.


** Recipe is same as before and simply. Just cut off the edges of the vegetable and cut them into ½ inch pieces. In all you should have about 3 cups. 

** Wash and strain in a colander. Keep this ready aside.

** Heat 1 tblsp oil in a thick bottomed kadai, add 1 tsp of mustard seeds (rai / sasam). When they begin splutter add in 3-4 red chillies cut into pieces and a few curry leaves. Fry for a few seconds.

** Add in the vegetables, keep the flame high and fry it for a few minutes. Lower the heat add salt to taste and sprinkle some water if necessary. Cover and cook on low flame till almost done. 

** Now add in 1 tblsp of freshly grated coconut to the upkari / bhaji and mix well. Cover and cook till done.

** Remove and serve hot as a side dish with Dalitoy and Rice or as an accompaniment to any dish of your choice. You can prepare upkari / bhaji in same method to most of the veggies too. Trust me its very healthy and nutritious.
