Grilled Spicy Potato Masala~Cheese Sandwich With Pudina~Dhania~Bimbul Green Chutney ….. Awesome tummy filling sandwiches when you want a change from the regular lunch / dinner. I love to have them any time ….. Yummy …........ 


Though preparation of sandwiches are simple if you have the items ready, this one is a little bit elaborate. Sometimes I like making sandwiches stuffed with eggs, potato, tomatoes, cucumber, cheese or even moogadali usli. Addition of eggs or potatoes makes the sandwich a little bit on the heavier side and leaves your tummy full for sure, so It can be relished as a lunch / dinner but you can have them for breakfast too. I somehow love them for dinner. Many a times you do not feel like having a meal of rice dal or curries at night. All of us get fed up of cooking a full meal at times when the day has been hectic. At the same time for lunch/dinner you would like to have something yummy. So for all those who love potatoes in any form like me this is a sandwich that will go well both with young and old. Kids will simply love them as its stuffed with cheese too. Sab khush …. Go ahead and enjoy these sandwiches in an relaxed atmosphere and enjoy a leisure day. For this sandwich mixture I just prepared a baji out of normal kitchen ingredients. Here it is ….


Wash well and pressure cook 2 large sized potatoes, when cool enough, peel of the skin and cut into small pieces. Keep this ready aside. Heat ½ cup of oil / ghee, when hot, add ¼ cup of halved cashew nuts and fry till light brown in colour. Remove and keep aside to add on later. Now in the same kadai continue to prepare the dish, add in 12-15 finely chopped garlic and fry till light brown in colour. Now add in 3 large sized onion cut into small sized cubes along with 2-3 finely chopped green chillies, continue to fry till the onions are translucent. Now add in 8-10 curry leaves and ½ inch piece of grated ginger and fry for another minute or so. Now lower the heat and add ½ tsp haldi powder, 2 tsp of pav bhaji masala powder (I used ready made powder available in the market), 1-2 tsp of kashmiri red chilly powder, ½ tsp of garam masala powder, ½ tsp fennel powder and fry well for a minute or two. If you find it too dry sprinkle some water and continue to fry. Now add in salt to taste and 3-4 large tomatoes also cut into small cubes similar to the cut onions and mix well. Cover and let cook the tomatoes till a bit soft. Once the tomatoes are 50%, add in the cooked and cut into small piece potatoes and mix well. Mash both the potatoes as well as the tomatoes a little bit with the back of spatula for the tomato juices to be released and mixed well with the potato and the other ingredients. Continue to cook covered till the mixed is cooked well and there is not much of liquid in it. Cover and let cook till it combines together for about 5 minutes. Garnish with finely chopped ½ cup of coriander leaves remove from fire. Spicy Potato Masala is ready to be added into sandwiches. Let cool a little bit. 


To prepare the grilled sandwich : Keep a flat board on table. Place a slice of large sized sandwich bread on it. Apply the Pudina~Dhania~Bimbul Green Chutney on the top side of the bread slice facing upwards. Now keep some sliced cucumber pieces on them all over say about 4 thinly sliced one’s. Now place a cheese slice on top to it. The cheese slice should be the same slice of the bread or else you can cut it to the required shape. Apply tomato ketchup to a slice of bread and keep it on top of the cheese taking care to see that the ketchup side is on the facing down side that is on top of the cheese. Now apply chutney on the top side of that slice of 2nd bread and top it with a large tablespoon of Spicy Potato Masala and spread in as a layer. 


Again apply tomato ketchup to a slice of another bread and place it inverted covering the potato mixture. This way you have tired up a sandwich with chutney ~ ketchup ~ cheese ~ masala potato sandwich with three slices of bread. Now apply softened butter / or melted ghee (Clarified butter) on top and bottom of the tired / clubbed sandwich and place it on the electric grilled sandwich maker and grill until evenly browned on both sides. Remove and keep it aside. Cut it into 2 or 4 triangles with a serrated knife. Prepare the required amount of clubbed / three layered sandwiches with the remaining bread slices and cut them also into triangles. Serve hot with additional tomato ketchup if required to dip on or as it is. Tastes really awesome.
