Sweet Sevai With Coconut ~ Jaggery Churan.

"Sweet Sevai With Coconut ~ Jaggery Churan" ..... This dish has lots of childhood memories attached to it ....... My Mom usually prepared this whenever she prepared fresh rice sevai / shevai for evening snack when we returned from school .... A simple yet yummy dish relished by children with joy .....

Awwwa .. this is a dish I am preparing after many many years. Though we like it, it’s a sweet one and in my home we prefer spicier dishes. Somehow I had completely forgotten about this one till my BIL mentioned about it while we were chitchatting on our train journey back to Mumbai. It was then that I realized that I had actually not prepared this for a long long time. Once a dish registers in my brain, then the desire to relish it keeps poping up every few hours. Sigh, guess I am a hard core foodie. A simple sweet dish that Mom used to prepare with the leftover shevai prepared for breakfast. We enjoyed eating it for tiffin in the evening when we returned from school. There is nothing elaborate in this dish if you have the freshly prepared sevai which is the major task holder. You just make a sweet churan with gud / jaggery and freshly grated coconut and mix in the crumbled sevai. That’s all .. Yummy.

Crumble about 5-6 freshly prepared sevai / shevai and keep it aside ready.

Grate about 100 gms of gud / jaggery and put it in a thick bottomed kadai with about a tablespoon of ghee. Keep stirring till the jaggery has completely melted. Bring to boil and simmer the melted jaggery for about 5 minutes. Now add in about one cup of freshly grated coconut and mix well. Keep stirring till the churan dries a bit say for 4-5 mins. Do not overcook the same or allow it to harden. We need a soft churan. Remove and allow to cool completely.

When the churan has cooled down completely add in the crumbled sevai to it and mix well. Add ½ tsp of freshly ground cardamom powder and another tablespoon of ghee and mix well. See to it that the mixture is combined well and all the sevai pieces are evenly coated.

The Sweet Sevai With Coconut ~ Jaggery Churan is done. Rest it aside covered for 10-15 minutes. Serve the same at room temperature. This is best prepared and relished within a few hours otherwise it becomes a little bit brittle. So prepare it just a few hours before serving time. Enjoy the dish with family and friends.
