Tomato soup is nothing new to anyone. Almost everybody enjoys slurping on this one be it at home or restaurant. My Mom loves this very much in restaurants and always makes it a point to have it specially with croutons floating on them. I have been relishing this soup for so many years now. In Mumbai, when tomatoes are abundant in season we get small lemon sized tomatoes which are very ripe, deep red in colour and juicy. I have always seen that whenever I prepare soups out of these tomatoes they turn up into thick and creamy soup with nice orangish red colour. Taste wise also these tomatoes are sweater while the larger one’s available are slightly sourish. So if you find them go ahead and prepare simple tomato soup and enjoy them piping hot during winter with your family for dinner. Here for a change I prepared croutons of potatoes instead of bread. You may prepare either or leave it out too. But do try potato croutons they taste yummy.
Peel off the skin of 2 large sized potatoes. Cut them into small sized cubes. Wash and rinse well under running water. Let the water drain off well. Put them on an thick towel and rub well. Allow to dry a little bit say 5 minutes. There should be no trace of water at all. So rub them between thick towel very well. Now heat enough oil in a deep kadai, when it reaches smoking point, reduce the heat to medium and wait for a few minutes. Add in the cubed potatoes and fry till crispy. The sizzling sound reduces to almost nill when the croutons are done. Remove and place them on an absorbent paper for the excess oil to drain off. Keep them ready aside to serve along with the soup.
Just wash one kg of ripe lemon sized tomato’s and allow the water to drain off. Put the tomatoes in a pressure cooker and add in one cup of water.
Pressure cook to 3-4 whistles on medium heat. Allow the pressure to release on its own. Once cool enough open the cooker lid taking care to see that you are not facing it. Allow the steam to pass off. Leave it open to cool down to lukewarm. Now put the cooked tomatoes in a mixer blender along with small piece of grated ginger and grind to a smooth paste. Remove and strain through a sieve into a thick bottomed vessel.
Check the consistency of the soup, if needed then add in water and mix well. Keep the vessel and bring the soup to a rolling boil on medium heat. Add in salt to taste and finely ground fresh pepper powder. Mix well and simmer for 5-10 minutes.
Rich And Creamy Tomato Soup is done and ready to be served. Serve the soup piping hot in individual bowls by adding on an handful of potato croutons. They taste very delicious. You may add on bread croutons too or just serve the soup plain or with bread sticks. Yumz.
