Come winter season and the demand for different varieties of soup comes on in my home. I have to keep cracking my brains to come across something different everyday. Though tomato soup is one of the best and in demand soups, we simply love any type of soups. The season is simply great to sip on leisurely on hot soups and if there is bread or bread sticks or even croutons and wafers it’s that much more enjoyable. There are so many soups that I have yet to post. So watch out for my postings in this blog for many varieties of soups and relish them with your family and friends.
This is a simple soup with creamy texture but spicy enough to tickle your taste buds. Easy to prepare and a very filling one. I make this many times as it is seasonal veggies and I prepare it on pressure cooker so that much hassle free. Well you can enjoy this soup with some fried bread slices the way I did this time, but usually I prefer it with some tortilla chips. My stock at home was over and I had somehow completely forgotten about it. Sometimes I prepare Methi chips for the same too … Will post it soon. But as of now all that was available was bread … so fried bread slices it was. Go ahead and prepare it, your family I assure will love this one.
Peel off the skin of 2 medium sized onions and slice them lengthwise. Keep this ready aside.
Peel off the skin of 1 large sized potato and cut them to large pieces. Wash, drain and keep them ready aside.
Cut about 250 gms of Cauliflower into florets. Wash, drain and keep it aside.
Peel and keep ready about 6-8 garlic cloves.
Chop into pieces 2-3 large less spicy green chillies.
Shell and get about one cup of green peas. Wash them and also keep them ready aside.
In a small vessel add in the green peas, few pieces of cauliflower (say 4-5 only), add in 2 cups of water and bring to boil, lower the heat and cook till the cauliflower and peas and 75% cooked. Remove and drain off the water. Do not throw away the water, keep it aside for cooking the veggies in pressure cooker.
Now in a flat – large pressure cooker pan add in 2 tblsp of fresh home made butter (you can use any), when it melts lower the heat and add garlic cloves and fry for a few minutes, then add in the sliced onions and continue to fry for 3 minutes or so. Remove some of the fried garlic's and the sliced onions and keep side for garnishing later on. Now add in the green chillies, remaining cauliflower pieces and potatoes. Now toss and fry all the ingredients in the pressure cooker pan well. Add in the water kept aside from cooking the peas and cauliflower. Mix well, add more water if necessary only.
Cover the pressure cooker with the lid and pressure cook to 2 whistles on medium heat. Let the pressure drop on its own. Once cool enough, open the lid gently and allow the steam to pass away. Now allow the pressure cooked ingredients to cool. Once its cooled remove and blend it in a mixer or hand blender to a smooth paste.
Pour the ground paste in a thick bottomed vessel. Add in the cooked peas and the cauliflower pieces. Add salt to taste and mix well. Bring to a boil on medium heat. Check the consistency of the soup. If needed add in water and mix well to bring to desired consistency. The soup is done and ready. Soups should always be served fresh and steaming hot. They taste the best then. Pour the hot soup in individual bowls and serve them garnished with the butter fried onions and garlic. Sprinkle some fresh coarsely ground pepper powder. You may tava fry with butter some bread slices and serve along with the soup or serve them with some tortilla chips or any other wafers. They taste great.
