Cheesy ~ Corn And Capsicum Mini Pizzas .......... Yummy And Delicious .......
Somehow I am always skeptical of outside Pizzas ....... the base is thinner and there is hardly any filling on top ...... I love my Pizza with good and healthy fillings ...... So I always make an attempt to prepare these with different fillings that appeal to my liking ......... off course I buy the base from stores ............ So go ahead and Enjoy these crunchy corn and capsicum mini pizzas with addition of spices ..... Yumz .... too good .....
Pizza is a flatbread soft with a hard bottom which is generally baked with tomato sauce topped with some veggies and cheese in the oven. This is served hot and everybody’s Fav. “Aaj dinner mey pizza banavungi meaning tonight’s dinner is pizza if announced everybody is on the dinner table on time to relish this Italian dish. Let’s face it, at some point in your life, maybe in your younger days or so pizza was one of your favourite food.
And topped with extra cheese its much more yummier. Millions of people all over the world consume pizza everyday. One of the most relished dish in modern world. I will not run into a subject which everybody knows about. I make lots of variations in these and enjoy these both in veg and non veg. Today I have prepared them with addition of fresh corn kernels. So go ahead, prepare these mini pizzas and enjoy them hot.
Heat 1 tblsp ghee / oil in a kadai / pan, when hot lower heat and add 2 large onion finely chopped and fry a bit for a few minutes, when a little bit translucent add 2 medium sized capsicum cut into small pieces and 1 cup of fresh corn kernels. Mix well cover and cook till 3/4th cooked, lastly add 1 large sized tomato also cut into pieces, mix well cook for a minute and add in salt to taste, pinch of garam masala, ½ tsp of coarsely powdered pepper. Mix well and remove from heat. Keep this ready aside.
Preheat the oven to 180 deg.C and keep ready.
Take 3-4 small sized pizza base, apply a little bit of melted ghee / butter on both the sides. Apply a layer of tomato ketchup and top with the prepared corn and capsicum mixture and finally top with grated cheese. Put it in the hot oven for 7-8 minutes, when the cheese starts to melt remove from the oven and then serve them hot.
The cheese should just melt and not burn. Enjoy the pizza with addition of ketchup if needed. But enjoy the pizza hot.
