Colourful Tossed Salad ....... With the 4 C's ie. Cucumber, Carrot, Corn And Cabbage ...... A healthy Salad with Lemon and Black Pepper Dressing ....
Tossed salads are something that are in Vogue nowadays. These have to be prepared and consumed immediately lest they go limp. There is nothing great in preparing a tossed salad. All you have to do is assemble the veggies you want and season them again with the spices of your choice and toss them lightly. You can have a large bowl of this as a dinner. A full meal in itself. Its quite filling and at the same time a light food which is easily digestible.
Peel off the skin of of 2 medium sized cucumber and 2 medium sized carrots. Cut them into thing long strips. Put them in a bowl. Similarly cut cabbage also into strips, say about one cup in all. Add this also into the bowl. Peel off the skin and thinly slice lengthwise 1 large or 2 medium sized onions. Put this also in the bowl.
Wash and drain 1 cup of fresh corn kernels. Put it in a microwave dish and cook on high for 2 minutes. Remove and let cool completely. Once cool add this to the other ingredients in the bowl. Add in ½ a cup of finely chopped coriander leaves. Finally add in some coarsely crushed pepper powder, salt to taste and squeeze fresh juice of half lime. Toss the salad and serve immediately.
