Tri Flavoured Cauliflower Bajia.


A tribute to My Country ........ India .....… With Tri Flavoured Cauliflower Bajia's / Bajo / Fritters ........

Ingredients :
Cauliflower : One large cut into medium sized florets.

For Besan Batter : 
Besan (Gram flour) : 1 cup
Red Chilly Powder : 1 tblsp.
Hing Powder : ½ tsp.
Salt to taste

For Cheese Batter :
Maida : 1 cup
Cornflour : 1 tblsp.
White Pepper Powder : 1 tblsp
Cheese : ½ cup (finely grated)
Salt to taste.

For Green Masala Batter :
Coriander leaves : 2 cups
Pudina (Mint) leaves : ¼ cup
Green Chillies : 4-5
Ginger : 1 tsp (chopped)
Garlic : 2-3 (chopped)
Maida (APF) : 1/2 cup
Besan (Gram flour) : ¼ cup
Salt to taste


For Besan Batter : Make a thick batter adding sufficient water to besan, chilly powder, hing powder and salt to taste. The consistency of the batter should be that, It should coat the back of a spoon well. Keep aside for 15 minutes.

For Cheese Batter : Make a thick batter adding sufficient water to maida, cornflour, pepper powder, cheese, salt to taste. The consistency of the batter should be that, It should coat the back of a spoon well. Keep aside for 15 minutes.

For the Green Masala Batter : First grind coriander leaves, pudina, green chillies, ginger and garlic to a fine paste with some water. Then add maida, besan and salt to taste and mix well. Again the consistency of the batter should be that, It should coat the back of a spoon well. Keep aside for 15 minutes.


Wash and drain the cauliflower florets in a colander. See to it that it is almost dry. Divide them into three batches for preparing of tri flavoured bajias / bajo. 


For deep frying : Heat plenty of oil in a thick bottomed Iron kadai. When smoking hot lower the heat to medium and wait for a few minutes. Now dip the first batch of cauliflower florets into the cheese batter and carefully leave it in the hot oil. Be careful. Allow to cook for 2-3 minutes before you stir it with slotted spoon. Fry till done. Keep stirring in between. Remove on a paper napkin for the excess oil to drain.


Follow the same procedure next with the second batch of cauliflower florets by dipping them in green masala batter and then the final batch of cauliflower florets in besan batter. Tri flavoured cauliflower bajias / bajos are ready to be served. Serve hot with Tomato ketchup.

Note: First deep fry the cheese bajia, then green masala and finally the besan bajias for the colours to remain intact.
