Palak Cheese Soup.


Spicy And Hot Palak Cheese Soup With Lots of Crushed Pepper ....... to beat the winter chills ...


Palak or spinach has lots of health benefits. You can just go through the net to know more about the health benefits of this amazing leafy vegetable. Soups, curries, pakodas, pulavs and many more items can be prepared using Palak, Paneer Palak being the most famous and liked one. When its winter and the winds send in cold chills, its nice to a have a hot soup or any other beverage that is piping hot. It gives one relief by heating up the body and keeping one warm. I have kept this palak cheese soup simple, adding minimum ingredients, as I wanted to just enjoy the benefits of palak. 


Ingredients :
Palak : 2 small bundles or 1 large.
Garlic : 10-15 finely chopped.
Ginger : 1 tblsp finely chopped.
Butter : 1 tsp.
Cheese : One cube.
Pepper Powder : as per taste coarsely crushed.
Salt to taste.


Wash and chop one or 2 large bundle of fresh tender palak / spinach leaves. In a pressure pan melt one teaspoon of butter and fry a few garlics chopped fine and a teaspoon of finely chopped garlic. When they turn slightly brownish, add in the chopped palak and one glass of water. Pressure cook to 2-3 whistles. Remove from heat and let the pressure drop on its own.


Once cool enough to handle, put all in a mixer blender and grind to a smooth paste. Pour out the ground palak into a vessel add in 2 or more cups of water and bring the palak paste to a thick soup consistency. Do not add too much of water. Add salt to taste, coarsely ground pepper powder (depending on how spicy you want the soup to be) and bring to a boil.


Lower the heat and simmer for a good 10 minutes. Remove and serve steaming hot topped with grated cheese and a few bread slices or any other accompaniment you like.
