Tomato Beetroot Onion Garlic Soup served with Toast.


"Tomato, Beetroot, Onion, Garlic Soup" served with Toast ... steaming hot soups are treat when served at dinner time be it any weather and tomatoes usually are always the preferred ones .... here is a simple soup with the goodness of onion and garlic to beat the cold weather ... Yummilicious .... 

** Soups are very good for health especially if your stomach is upset with heavy food continuously. Try including soup diet at least once in a week serving it only with some toast during dinner instead of the heavy food and give some rest to that tummy from heavy food or undigested food. Children can have them in the evening when they come back from school screaming for some food. Try this garlic flavored tomato soup and you will simply have everybody craving for more.

** Here is my own simple recipe for "Tomato, Beetroot, Onion, Garlic Soup" ... my style ... try it, tastes awesome ....


** Wash and roughly chop about 1 Kg of Juicy ripe red tomatoes.

** Peel off the outer skin, slice off both the edges and chop finely one large sized beetroot, wash them and add it to the tomatoes.

** Remove the outer skin and roughly chop 2 large sized onions/ piyavu/ kanda and add to the chopped tomato and beetroots.

** Peel off the skin of about 8-10 garlic/ losun/ lehsun, chop them to small pieces and add them also to the above ingredients. 

** Now put all chopped ingredients into a pressure cooker along with 3 cups of water and pressure cook on medium heat to 3-4 whistles. 

** Remove and keep aside and let the pressure drop on its own. Remove the lid and cool the mixture to room temperature.

** Blend all to a smooth paste in a adding in more water if necessary. Try to keep the soup as thick as possible. Strain the soup through a thick holed sieve.

** Bring the soup to a boil, add salt/ Kala Namak/ meeta to taste and 2 tblsp of black pepper (miri) powder, mix well and let simmer for 10 minutes.

** "Tomato, Beetroot, Onion, Garlic Soup" is done and ready to be served. Serve the soup steaming hot with some bread sticks or toast. You can serve them adding in some croutons too.
