Spicy-Hot Tomato Carrot Soup With Bread Croutons.


"Spicy-Hot Tomato Carrot Soup With Bread Croutons" ... Nothing beats a heart warming soup on chilled nights ... come winter and its always soups for dinner served with either Bombay Pav,  toast, rusks, bread sticks, buns etc. But the the most favorite of all in my home is relishing bread croutons dunked in hot steaming soup ... exactly the way I grew up relishing it though it ... Yummilicious ...  

** Ahhhaaa again the season of hot soups come by in a another month or so. These are actually a favorite in my home and husbands loves them the most. He loves to have soups with toast/ bread/ pav/ kadak pav with steaming hot soups for dinner while my favorite is bread croutons or bread sticks. For a few decades now croutons have disappeared from the kitchen and people usually serve it with soft different varieties of homemade or store bought buns/ croissants. I have yet to learn to prepare them and though my friends assure they are easy I am still hesitant of doing so after so many years of watching them. But croutons being my favorite, I was missing them and as there was some leftover bread slices thought of going ahead and preparing them for dinner to be served with this delicious veggie soup. 

** I have given in detail about the making of croutons elsewhere in my blog to which I will post the link at the bottom of this recipe, do browse through the same if interested they are easy to prepare and are fine to be had a piece or two once in a way, specially during winter. Children who are otherwise always fussy eaters are sure to relish them. Here is a simple trick to make them have the soup, just add one piece and lure them into having the soup with the crouton till a few sips are done with then add another piece once half the soup has been consumed, that will prevent them from only having the croutons and brushing aside the soup. Also they will have the soup without a murmur eagerly waiting for the next piece of crouton and you will have the satisfaction of seeing to it that a good veggie soup has entered the kids tummy. I 

** Here is my simple recipe for "Spicy-Hot Tomato Carrot Soup" that I served topped with heart shaped brown Bread Croutons that tasted simply awesome .....
** Ingredients : 

1 Kg small button sized tomatoes. 
2 large sized carrots/ gajjar (about 250 gms) 
1 tsp red chilly powder/ mirchi powder
1/3 tsp haldi/ turmeric powder 
1/3 tsp coriander/ dhania/ kothimbir powder 
1/3 tsp jeera/ cumin powder 
1 heaped tblsp coarsely ground black pepper/ kali miri powder 
2 tblsp of ghee/ toop 

** For Serving (Optional) : Some bread croutons for serving. 


** Wash and add tomatoes into a pressure cooker. You can use any tomatoes, if large chop them into pieces before you put them in pressure cooker. 

** Peel carrots and cut them to strips or pieces. Wash and add them to the tomatoes in the pressure cooker. Now add 2 cups of water and pressure cook to 2-3 whistles. 

** Let the pressure drop on its own. When cool enough to handle put it in a blender and grind to a very smooth paste mixing them all in between once or twice.

** Remove and sieve it into a stainless steel vessel. Add in water to bring to a thick soup consistency, mix well and bring to a boil, lower the heat and let simmer. 

** Now heat ghee in a small pan, when hot add in powders mentioned above, fry just for a few seconds and then pour over the soup. Bring to boil and remove then from fire. 

** Note : I added masala powders to this particular soup, to remove the sweetish flavor of the carrots. You may leave out this step and just add some pepper powder if you wish so. 

** "Spicy-Hot Tomato Carrot Soup" is done and ready to be served topped with some heart shaped brown Bread Croutons. Always serve soups in large wide soup bowls steaming hot with any accompaniment of your choice.
