Egg Crab Fried Rice.


Egg And Crab Fried Rice with ...... Chilly Tomato Ketchup, Soya Sauce and Chillies in Vinegar ......



Fried rice is a Chinese dish famous all round the world. Everybody simply loves it. The rice is a bit under cooked, so are the vegetables which give the dish a crunchy texture. 


Fried rice is prepared with both Veg and Non Veg Items. This one is my way of preparing a fried rice … I have added crab meat sticks readily available in the stores at Malls along with the eggs. Tastes great.


Manchurian is another Chinese dish that goes very well with fried rice and the most famous combo served at all functions in each others company. I have prepared Egg and crab fried rice here the recipe of Manchurian is to follow soon. 


Ingredients :
Jeera rice : 2 cups
Crab meat sticks : 5-6
Garlic : 15-18
Green Peas : ½ cup
Carrot : 1 large sized
Capsicum : 1 large sized
Eggs : 2
White Pepper Powder : 1 tsp 
Onion : 1 large sized.
Aji-no-moto : 1 pinch (Optional)
Oil : about 2-3 tblsp
Vinegar : 1 tblsp
Soya Sauce : 1 tblsp
Salt to taste











Wash and soak 2 cups of Jeera Rice in plenty of water for 20-30 minutes. Wash well and drain. Bring to a boil 10 cups of water in a large vessel. Add a tablespoon of oil and salt to taste and add in the drained rice. Mix well and bring to a boil, lower heat cook for 5 minutes. The timings for cooking of the rice differs for different types of rice. The outcome should be that, you should get just cooked rice to 75% only. Remove from fire and drain of the water. Put the cooked rice in a colander and rinse well under normal running water till it cools completely. This arrests further cooking of rice and remains a bit under cooked. Put in a colander and keep it aside for all excess water to drain off completely. 












Chop 5-6 crab meat sticks into 2” pieces and keep this ready aside. I have used ready made crab meat sticks available in the market here. This is optional and you can leave out the same or add crab meat after cooking it a little bit.












Peel of the skin and chop one large onion finely and keep aside ready.


Peel off the skin of 15-18 garlic and chop them to small pieces and keep it aside ready.












Shell and keep ready 1/2 cup of green peas, 1 large sized carrot peeled and chopped into small pieces, 1 large sized capsicum also cut into pieces. Wash and keep all three ready in a colander.


In a porcelain or glass dish break in two eggs, add a pinch of salt and pepper powder and beat it with a fork lightly.











Heat 1 tblsp of oil in a thick bottomed kadai, when hot lower heat to medium and add in the beaten eggs, leave for a minute and then start scrambling it with a flat spatula till evenly scrambled. Remove and keep this ready aside.












In the same kadai add 1 tblsp of oil, when hot add the chopped garlic and fry on high heat for a minute then add in the chopped onions and fry on high heat for another minute or two. Add a pinch of Aji-No-motto now, if you want to add it. I avoid this ingredient as I am allergic to it. So I have not added any. Also I did not find any difference in the taste. So it is up to you to decide and add it or not. 




Now add in the drained vegetables ie. carrots, peas and capsicum and fry on high heat pushing at away from the centre towards the outer surface of kadai. This is to ensure even heat distribution as there will be more heat towards the centre. Lower the heat and cover and cook the vegetables for 3-4 minutes. Now remove the cover and raise the heat and fry on high heat to seal in the vegetable juice for another 2-3 minutes. The vegetables will have been cooked by now, but they should remain a bit crunchy. 


Add in the scrambled eggs, mix and crab meat pieces and mix well. 

Now add in the prepared rice also and mix well.


Add 1 tblsp of vinegar, 1 tblsp of soya sauce, salt to taste and 1 tsp of pepper powder (preferably white pepper powder). I added black pepper powder as I did not have white pepper powder. 


Mix all gently, lower the heat, cover and let cook on its own steam for 5 minutes till well cooked and evenly heated. 


Egg and Crab Fried Rice is ready to be served. 


Remove and serve hot with any dish as accompaniment and also serve Chilly Tomato Ketchup, Soya Sauce and Chillies in Vinegar along with it. 


Manchurian (Veg / Non-Veg) is a dish that goes best with fried rice. The recipe is to be posted soon.
