Methi Lachha Paratha with Potato-Cauliflower-Green peas Bhaji ..........


Take a large bowl, add in 3 cups of wheat flour, 2 cups of cleaned, choped, washed and drained well Methi leaves, salt to taste, ½ tsp of sugar powder, 1 tsp of haldi powder, 1 tsp of red chilli powder, ½ tsp jeera powder, pinch of ajwain, ½ tsp hing powder and 2 tblsp of refined oil. 












Mix all the ingredients with fingers to a crumble texture. Now add some water and knead the mixture into a tight dough. Cover the dough with a wet cloth. Cover the bowl and keep aside for at least 20-25 minutes. 




Knead the dough again and divide into equal balls. Roll each dough in loose wheat flour and with the help of rolling pin roll out into a thick round roti. 




With the help of a blunt knife cut the roti in a spiral ring from the inner side proceeding towards outer rim of the roti. You should go in one continuous flow similar to making of chakli. 












The rings should not break. Apply oil over the cuttings and spinkle some wheat flour.




Now start folding the cut rings by rolling like how it is done in khandvi. It will form into a spiral rolled round flat tikki shapped ball. 












Now dust it with wheat flour and roll out gently into roti size. Do not put more pressure while rolling. Gently roll so that the rings get evenly rolled and not flattened while rolling the roti. 




Heat a tava on high, when hot, lower the heat to medium, spread some oil on the tava and gently place the rolled laccha paratha. Apply oil on the top surface. 













Sprinkle some masala powder or chilly powder and when cooked on bottom side flip over and cook the top side too till you get brown spotted crispy paratha. 



Remove and crush it a bit with you hands gently. This will help in loosening of the rings and they will bounce up in layers. 


Prepare Laccha Parathas in similar ways of the remaining wheat dough. Serve with any curry and bhaji of your choice. You can smear some melted ghee on top of the Paratha while serving.
