Coconut Chutney.

Snow White Coconut Chutney ...........

I always wanted to make chutney that looked super white like the one’s they serve in hotel, but somehow could never get the colour. Finally I somehow managed to get information from a hotel chef. Simple do not add tamarind and add light coloured green chilly only. Here is the recipe for that awesome chutney. The result however is a bit sweeter chutney than the spicy one’s usually prepared.

Grate the topmost white part of the coconut only. For one cup of coconut gratings add 2 finely chopped green chilly and grind to a fine paste. Remove and put it in a bowl.

For tempering: Heat oil in 1 tsp of oil, add ½ tsp of urad dal, when slightly brown add ½ tsp of rai (sasam), a few curry leaves and lastly just a small piece of red chilly. Pour it over the chuteny. 

Serve this chutney with Biscuit Ambado / Golibajo / Idly / Dosa etc.
