Moong Dal + Cucumber + Raw Mango + Carrot... Koshimbir /Salad...........
Wash and soak 1 cup of moong dal in plenty of water for 1 hour. Rinse well and drain off all the water. It should be really well drained and dry. Keep this ready.
Peel the skin of 1 large sized or 2 medium sized cucumber. Cut it vertically lengthwise and remove the inside seeds, chop them finely. Peel the skin of 1 large sized or 2 medium sized carrots and grate them and keep it aside.
Wash and wipe dry one raw mango and grate it with skin to get about ½ cup of it. Keep the rest aside you can use it for any other dishes. Addition of more raw mango makes the salad too sour and is not liked by many elders as well as children. Pick, clean and chop ½ cup of coriander leaves and keep them ready.
Now in a bowl mix all of the ingredients (Moong dal, cucumber, carrot, raw mango, coriander leaves) well with salt to taste.
For tempering : Heat 1 tsp oil in a small pan, add ½ tsp jeera, ½ tsp rai (sasam), when they splutter, add in 1 tsp of hing powder, ½ tsp coarsely crushed pepper powder, 1-2 green chillies cut into pieces and 8-10 small sized curry leaves and fry well. Pour this over the koshimbir and toss all very well.
Serve koshimbir with any dish as a side accompaniment.
