Cucumber Coriander Curd Delite

Cucumber Coriander Curd Delite ........

Cucumber coolant is a drink you can prepare with many combinations. One of them is by adding curds and coriander leaves. This is both filling and healthy drink to be consumed during summer heat. It cools the body and is light on the stomach.

Method : Wash and wipe one large sized cucumber. Chop it into chunks cutting off the edges but retaining the skin. You can peel of the skin if you wish, but I like it with skin which is food for health. 1-2 chopped green chilly, 1 tsp hing powder, ½ tsp jeera powder, pinch of rock salt, ½ tsp coarsely crushed pepper powder, Salt to taste, 1 cup coriander leaves, cleaned and chopped, 2 full cups of thick curds.

Put all the above ingredients into the blender jar with one cup of cold water and make to a smooth paste. Remove the mixture in a vessel, do not sieve, add another cup of water, juice of one freshly squeezed lemon and beat well. Serve chilled in tall glasses.
