Tender Coconut Cream with Banana and Pova.

Tender Coconut Cream Also known as nariyal ki malai with Banana and Pova.

This awesome dish brings back childhood memories ........ Ate this after a very long time .... Tender coconut cream / malai, with banana and pova with a dash of ghee+sugar+ cardamom +saffron(Op) is a sweet dish prepared in coastal southern part of India especially in Mangalore. Children enjoy this delicious dessert very much.

Tender coconuts drinks are healthy and refreshing for both young and old people alike. This is enjoyed throughout the year. However it is a very useful drink during summer time, when there is too much humidity and heat. It is found in abundance in southern coastal regions.

Tender coconut water has almost all the essential minerals, it is packed with simple sugars, electrolytes and minerals to replenish dehydration conditions inside the human body. The inside wall of the tender coconut has a very creamy and gelatinous flesh which looks and feels like jelly because you can eat it with a spoon. During our summer holidays as children we enjoyed this delicacy prepared by the inner fleshy coconut cream. It is quite filling too.

To prepare the above dessert : Remove the creamy flesh of 2 Tender coconuts, they should however not be too thick, but thin and fleshly. Chop them to bite size pieces. Peel and cut one banana into rings. Add this to the chopped coconut flesh. Add ½ tsp of fresh homemade ghee, pinch of saffron, pinch of cardamaom and 2-3 tblsp of sugar. Mix these well, the sugar should get mixed well. Now add in ½ cup of thin pova to the mixture and mix well. Serve immediately. If you find the mixture too dry you can sprinkle some tender coconut water to the mixture and mix well just before serving.
