Piyava Bajo / Onion Bajia


“Piyava Bajo (Onion Fritters/ Kanda Bajia)” … simple deep fried fritters that can be prepared in a jiffy when in hurry yet you want to eat some delicious during monsoon … can be relished along with other dishes for lunch/ dinner or as a snack too … Yummilicious …. 

 

Recipe : In a bow add in 1 cup of besan (Bengal gram flour), 1 tblsp of spicy red chilly powder, ¼ tsp of jeera powder, ½ tsp of hing powder and salt to taste. Mix all gently. 

Add in enough water to bind into a thick paste. The paste should coat the back of a spoon thickly and not slip off easily.

Now add in 2-3 medium sized onions cut lengthwise. Add 1 tblsp of raw coriander seeds and mix well. The batter should just coat the onion slices and not be dipped in it.

Heat plenty of oil in a kadai for deep frying. Once it reaches smoking point, lower heat to medium and wait for about 5 minutes. Now add in the mixed onions gently into the hot oil randomly, do not give them any shape. Just keep dropping some with hands.

Keep stirring the onion bajia to cook them evenly. Once the onion bajia turn redish brown and is crispy remove into an absorbent paper and keep it for a while for the excess oil to drain off. Serve hot as a snack with tea.
