Chillled Dhania-Pudina-Aam Panna (Panak) / Coriander-Minty-Raw Mango Coolant ... to beat the summer heat ......











This cool drink is really refreshing during the summer month. The drink can be prepared in various combinations the main ingredient being Raw Mango. Here I have added coriander leaves and mint leaves for added greeness, goodness and taste.




Wash and wipe 2 large or 3 medium sized raw Mangoes. Slice the sides. Put the slices and the Mango with seed in a pressure cooker and add 2 cups of water. Pressure cook to 2 Whistles. Let cool completely. 


Once the mango has cooled squeeze out all the fleshy part with the skin and the slices and put it in a mixer. Add about one cup of sugar (more or less depending upon the sourness of the mangoes), ½ cup of coriander leaves, 10-12 leaves of mint, 1 tsp jeera powder, pinch of fennel seeds powder, 1 tblsp rock salt and grind to a smooth paste. Add water if necessary. Remove and strain the ground juice by a fine sieve. Serve chilled.
