Scrambled Egg Cheese Pizza.











Heat 1 tblsp ghee / oil in a kadai / pan, when hot lower heat and break in 2 eggs gently into it. Stir immediately till everything mixes well. Leave for a minute or two for the eggs to settle then with a spatula keep stirring so that you get even sized scrambled eggs mixture. Add in a pinch of salt and coarsely crushed pepper powder and mix well. Remove from heat and keep aside.











In the same kadai / pan add 1 tblsp of ghee / oil, when hot add 1 large onion sliced finely lengthwise and fry a bit, add 1 medium sized capsicum cut finely lengthwise / strips and fry till 3/4th cooked, add 1 large sized tomato also cut into strips. When the tomato is just about cooked add in salt as per taste, pinch of garam masala, ½ tsp of coarsely powdered pepper. Mix well and remove from heat. Add in the scrambled eggs to this and keep ready.


Preheat the oven to 180 deg.C. 











Take 3 small sized pizza base, apply a little bit of melted ghee / butter on both the sides. Apply a layer of green coriander chutney first, then top it with a layer of prepared scrambled egg mixture, then a layer of tomato ketchup and finally top with grated cheese. Put it in the hot oven for 7-8 minutes and then serve hot. The cheese should just melt and not burn.
