Green Brinjal/Vangi Bhaji with Garlic


Green Vaigana Talasani / Green Brinjal/Vangi Bhaji with Garlic.


Cut one big vangi into 2 inch length pieces. Wash well in a colander & let all the water drain. 












Heat 1 tblsp oil, when hot add in about 10-12 garlic cloves, when they turn light brown add in 3-4 chopped red chillies fry for a minute. 












Now add in the cut vangies salt to taste and mix well. Cover and cook on slow flame till done. Serve hot with Dal-Rice.
