Vegetable Kurma.


VEGETABLE KURMA.....This is my Mom's Very Old Recipe which i follow to date. It tastes awesome with simple pulav or roti ... Yummy yumz ...


Vegetable kurma is a very delicious curry that is famous all round the world. My Mom prepared this particular one frequently and till date I love it just this way. You can add on any vegetables, but by and large its cauliflower, peas and carrots along with chow chow (seemebadanekai). I love the aroma of this curry and the chow chow added to this curry tastes simply awesome. Whenever I see it in market I make it a point to buy the same exclusively to prepare this dish. Do try out this yummy dish. 


For Masala: Grated coconut 4 cups, turmeric 1 tsp, ginger 1", Onion 1 small, cus cus 2 tsp . green chillies 7, garlic 10-12, cloves 7, cinnamon 2", coriander seeds 1/2 tsp, Jeera 1/2 tsp, pepper 1 tsp. cardamom 2. Kashmiri Red chillies 15(less spicy).


Fry the above ingredients from turmeric to chillies in 2 tsp of oil for about 3 minutes. Add the coconut and fry for another 3-4 minutes.  


Grind the fried masala to a very fine paste with as little water as possible. Cook vegetables  of your choice (cauliflower, carrots, capsicum, green peas, chow chow) and keep them ready aside. You add in some freshly cut paneer pieces too. The same can be prepared with eggs or can be added along with vegetables too.


In a thick bottomed kadai, heat 1 tblsp oil, when hot add two onions chopped finely and fry till transluscent, add the ground masala and fry further for a few minutes add one or two chopped tomatoes and the cooked vegetables,  mix well.  


Add water to the curry to make it to desired consistency. let simmer for some time. If adding paneer, add now and remove from fire. Lastly garnish with coriander leaves and keep the curry aside for the flavours to seep in. Paneer will get softened in the heat, so do not overcook it, as it will harden if done so.


Vegetable Kurma is done and ready to be served with Roti / Parathas / Pulav / Poori. Enjoy this dish with your family and friends. Tastes awesome with all the three mentioned. Do try this curry and if at all chow chow is available to you do add in to this awesome curry and note the difference in tastes. 

Note : You can add 2 tblsp beaten curd instead of tomatoes.
