Tomato - Onion - Capsicum Omelette with Ginger Chutney.

Tomato - Onion - Capsicum Omelette with Ginger Chutney & Tomato Ketchup.

This one is a very easy dosa, as I do it with left over batter of Masala Dosa.

2 cups of left over dosa batter, 2 heaped tblsp Besan, 2 heaped tblsp Maida, ½ cup of Bombay Rava, ½ tsp haldi powder, salt to taste, ½ tsp grated ginger, 1-2 grated/green chilli paste.

Mix all these Ingredients to a smooth batter adding in some water. The batter should be thick. The texture as that of Idly batter. Now add in one small chopped capsicum, 1 finely chopped onion, one finely chopped tomato, 2-3 tblsp of finely chopped coriander leaves.

To remove Dosa:….. Heat a dosa pan, spread some oil add in ½ cup of the prepared batter making gently a round circle. See that the chopped vegetables spread nicely and do not remain in the centre.

Cover and cook on medium Flame till the top side of dosa is cooked. Keep checking the heat or else the backside of dosa may burn. Add some oil on top of the dosa, flip over and fry by pressing down gently so that the added vegetable touch the tava and get the fried texture.

Remove and serve hot with Chutney/Ketchup of your choice.
