Muskmelon in Sweet Coconut Milk with Poha / Chibdache Harshala with Povu.


Chibdache Harshala With Povu / Muskmelon in Gud- Coconut Milk served with Poha/ Beaten Rice .............


Chop chibbada (muskmelon) into small pieces & keep aside.


Now grind together 200ml of coconut milk ( I used ready made You can use fresh one’s too ) with 2 cups of grated jaggery. Add this to the chopped melon pieces along with 2 cups of boiled & cooled water. Add ¼ tsp of cardamom, a pinch of saffron and mix well. Keep it in the fridge to chill.


For serving: Serve chilled in a bowl along with some thin beaten pova (Optional).



For preparing fresh coconut milk: Take about 2-3 cups of fresh grated coconut & grind to a fine paste with required amount of water (about 2 cups). Strain this through a muslin cloth. This is the first thick coconut milk. Now grind the coconut residue again with about 1 cup of water & strain again. This is the second thin coconut milk.
