Kesar Bhaat / Sweet Saffron Rice.


Kesar Bhaat

Heat ½ cup of ghee in a pressure cooker pan. Add in ¼ cup of cashews and slightly brown them. Add ¼ cup of raisins and mix well when the raisins swell and cashews are nicely browned remove and keep aside. In the same ghee add 1tsp of cloves. Now add in washed and strained 2 cups of rice. (I used jeera rice which is used mostly for fried rice, your can use any good quality rice like Basmati rice). Fry a bit for 2mts. Add in 3 cups of water, 1tsp of saffron soaked in warm milk and pressure cook to 3 whistles. Let pressure drop.


The rice has to cook about 85-90% only or else the kesar bhaat becomes mashed. Now keep 2cups of sugar with enough water to soak it and boil it to one thread consistency. Add this to the rice, mix well and keep on slow fire. Add the fried cashews and raisins. Keep stirring till the rice becomes a bit dry. Remove and add a big pinch of cardamom powder mix well and serve hot/room temperature.
