Dangara / Starter made with Radish Leaves.


Dangara is the name of the dish. Its a deep fried item served with Dal-Rice. It can also be served as starter with Chutney / Ketchup. Its prepared with any one or combination of leafy vegetables like Tender Radish leaves, Taikilo / Takla, Methi leaves etc.


Recipe : Wash and soak one cup each of tuvar dal and rice together for 2 hours. Rinse well and strain all water. 

Grind to a coarse paste with 8-10 Red chillies (or 2 tblsp chilly powder), small marble sized tamarind, 2 tsp of hing powder, 2 heaped tblsp of fresh grated coconut (Optional).


Remove and add salt to taste and finely chopped 4 cups of tender radish leaves ( or any other leaves) along with its tender stems. Do not add stems if they are not tender. For this recipe i have added 3 cups of tender radish leaves and 1/2 a cup of coriander leaves too.


Combine well, make it small balls, flatten them a bit and deep fry in hot oil till golden brown in colour. Serve hot as a starter / side dish with Dal-Rice.
