Coconut Honey Ice Cream + Chocolate Coconut Ice Cream


"2 in 1 Ice Cream... Coconut Honey Ice Cream + Chocolate Coconut Ice Cream Topped with roasted Cashew Nuts" ... Here is a simple Ice Cream in two flavors in one go ... tastes awesome when served topped with roasted nuts ... 

** Ice Cream's are a delight to relish at functions or even in homes. I am not very fond of this chilled dessert but my hubby loves it very much, so I try my hand at it. Though it is not perfect like the ones bought from stores or branded Ice Cream, it is much healthier and great to relish at home with family and friends.

** For Preparation of Ice Cream : 1 can condensed milk, 2 cups chilled heavy cream, 1-1/2 cups of coconut milk ( i used 1 tetra packet of 200 ml ready made coconut milk).

** Mix condensed milk and coconut milk together and beat the mixture lightly either with a hand whisk or in a blender. In a separate glassware beat the chilled cream with a electric beater till soft and fluffy and then add both the mixture together and mix well.


** Pour in to the container of ice cream churner machine and put it in the freezer. I do not have one, so I transferred it into a freezer-safe container and left it to set. Every 20 mins I removed the container out of freezer, and mixed well with a fork making sure to break ice pieces / crystals formed if any and incorporate air into the ice cream mix for a creamier ice cream. 

** After about an hour or two remove the ice cream and remove crystals and beat it well and then divide into two part. Mix 2 tblsp of honey into one of the mixture, and 2 tblsp of cocoa powder into the other. (Mix the cocoa powder first with little bit of milk and make it to smooth paste and then add to the ice cream).

** Keep the cocoa mixed ice cream in the fridge to just chill while you pour the honey coconut ice cream mixture into the ice cream tin and freeze till slightly set but little mushy  At this time remove and add in the chilled chocolate ice cream on top of this gently to make a layer above the previous one.

** Now cover with a tight lid and put it back in freezer overnight and your ice cream ready. Remove from freezer about 10 minutes before serving. Invert the box on a plate after running a blunt knife all round the box gently on a plate. Cut to slices and serve with roasted cashew nuts.
