Chilled Sweet Pineapple Lassi/ Curd Coolant.


"Sweet Pineapple Lassi" ... switch on from aerated drinks to healthy homemade coolants … here is a sweet delicious drink prepared with fresh pineapple (avnasa/ ananas) that are available in plenty now along with skimmed milk curds that must be included in your food diet ... Pineapple is good for viral, bacterial infections, helps in boosting immunity and also helps in building stronger bones … curds as you all know along with the said above benefits is also good for the gut/ stomach … try karke toh dekho~ accha lagega ... Yummilicious … 

** Lassi is a sweet flavored delicacy prepared with thick curds and served cold or chilled. Though it is more famous in the northern parts of India, it is now relished all over the country. Almost everybody is aware about this delicious coolant drink Lassi, so, I will not run into more details about the same as I have already included a few variations and will add on more in future too. I am sharing a common link to lassi at the bottom of this recipe through which you can access them and try them out too. I am also sharing the link to method of setting perfect curds at home, which you can browse through if need be. About Pineapple/ Avanas/ Ananas almost all of you know the benefits so do include them in plenty and enjoy the health benefit. 

** Here is the simple recipe for "Sweet Pineapple Lassi” … My Stye … 

** To get about 2 extra large sized glasses of thick sweet pineapple lassi you will need approximately about 3 glasses of thick freshly set homemade curds. If curdes is not thick in texture, then strain it a little bit through a muslin/cotton cloth and it will give the desired texture. Do not throw away the whey/ drained water from curds, you can add them back once the lassi is prepared if found too thick or you can prepare roti dough etc. with the same too. 

** There is another method to ensure that you get thickness to skimmed milk curds. Just heat the skimmed milk well, remove and mix in 1 tablespoon of skimmed milk powder to the hot milk in proportion of 1 tblsp for one glass of milk ratio. Mix well and let cool, when just warm enough (tepid) add in a tablespoon of curds/culture for setting of curds and leave it aside covered in a warm place to set and you will get thick well set curds suitable for lassi. 

** Slice off the top stem portion and discard it, then slice off the thick outer skin of the pineapple include and remove the eyes and then chop the edible portion into small pieces. Now add the pieces into a mixer grinder/ blender and grind to a very smooth paste without adding water or just a little bit of water and then strain the juice through a fine sieve. You should have at least 1 cup of thick pineapple juice for 4 cups of thick set curds. 

** Add the juice to the curds along with sugar to taste say about 2 tablespoon for each large sized glass of lassi and mix well till the sugar has mixed in well taking care to see that there are no lumps whatsoever in the lassi and the texture is really smooth. You can keep it in the fridge to be served later or you can add in a few ice cubes and serve it immediately too. Tastes equally good if you want to have it without being chilled. 


** "Sweet Pineapple Lassi” is done and ready to be served. Tastes best served cold or chilled, do serve it with a spoon if too thick as that is the usual way it is served in lassi corners. You can also top it with a few finely chopped pineapple pieces too, I have not as I did not have any. Pineapple lassi is really tasty with lots of health promoting properties in them and addition of curds makes it that much more nutritious and healthy too. 

** Do include Lassi whenever possible and make it a habit with your children to enjoy these as coolants instead of store bought ones. Lassi in my opinion is somewhat a small meal in itself specially so if you add on fruit purees like strawberries, bananas, custard apple etc. I love to have these during fasting/upwas days as it not only freshens up your mood but also is very filling on tummy keeping your mind away from food. 

** This Lassi is also full of proteins and good for health specially if you prepare it with skimmed milk curds which is what I always do. Also see to it that you prepare the curds at home as it is very easy, hygienical and economical to set the curds at home.
