Carrot Pulav.


Carrot Pulav.....


Wash and soak one cup rice ( I used jeera rice you can use Basmati) for 20-25 minutes. Drain well and keep it ready.



In a kadai heat ¼ cup of ghee when hot add in 1 tblsp of jeera, 1 tsp whole pepper, 7-8 cloves, 2 green cardamoms slit, 2 Black cardamoms slit, 1 star anise, 1 bay leaf, 8-10 curry leaves, 1” piece of cinnamon and fry well.


Add one small onion sliced thinly lengthwise to the above and when it turns pinkish in colour add rice and fry well for a minute. 


Now add 2 cups of boiling water and salt to taste to the rice, bring to a boil, mix well, lower heat, cover and cook till 95% done. 



Now add two grated carrots, 1 cup of coriander leaves chopped very finely and 1 tblsp of crushed pepper. Mix, cover and cook till done. Serve hot garnished with 1 tblsp of browned onions (Optional) with the curry of your choice.
